Chicken-and-Wild Rice Casserole

Ingredients

2 x 6.2 boxeslong-grain and wild rice mix
fast-cooking
¼ cupbutter
4celery ribs
chopped
2onions
medium, chopped
5 cupsrotisserie chicken
chopped
2 x 10.75 ozcream of mushroom soup
cans
2 x 8 ozpped water chestnuts
cans, cho, drained
1 x 8 ozsour cream
container
1 cupmilk
½ tsptable salt
½ tspblack pepper
16 ozshredded Cheddar cheese
divided
2 cupsbreadcrumbs
1 x 2.25 ozsliced toasted almonds
Instructions
Step 1
Preheat oven to 350°.
Step 2
Prepare rice mixes according to package directions.
Step 3
Meanwhile, melt butter in a large skillet over medium heat; add celery and onions.
Step 4
Sauté 10 minutes or until tender.
Step 5
Stir in chicken, next 6 ingredients, rice, and 3 cups cheese.
Step 6
Spoon mixture into a lightly greased 15- X 10-inch baking dish or 2 (11- x 7-inch) baking dishes.
Step 7
Top with breadcrumbs.
Step 8
Bake at 350° for 35 minutes.
Step 9
Sprinkle with remaining 1 cup chees and top with toasted almonds.
Step 10
Bake 5 more minutes.
