There is nothing quite as satisfying as taking a mouthful of soup and then biting into a delicious soft potato dumpling . I add thyme to give it a nice flavor but you can add any herbs you like or even leave it out

Instructions
Step 1
Wash the potatoes then place in a pot with salted water bring to the boil and cook until fork tender . Once cooked and peeled mash with a fork until smooth

Next add 2 egg yolks a pinch of salt and black pepper thyme and potato starch . Now mix all of this with a spatula or spoon until a dough is formed . If it’s still a bit sticky add a little more potato starch . Now take 3/4 tsp measurements of the dough and roll into little balls and put on a plate

Step 3
Once the soup you are adding these to is cooked add the dumplings in bring to the boil and let simmer 4-5 minutes. Alternatively you can cook a broth and simply add the dumplings to the broth for a nice quick soup
