Instructions
Step 1
Chop cauliflower into bite size pieces.
Step 2
Mix well with 2 Tbsp of olive oil and kosher salt. Lay out pieces evenly on large baking tray so that it doesn't overlap.
Step 3
Bake cauliflower at 400 F for 30 minutes or until brown on top.
Step 4
Fry corn tortillas in small amounts of oil until browned on both sides.
Step 5
Layer in a casserole dish: sauce, tortillas chicken, cauliflower, sauce, 1/2 C cheese, tortillas, etc. End with tortilla, sauce then 1 cup of cheese.
Step 6
Bake casserole for 30 minutes or until boiling at edges and browning on top. Cover part way through if the top browns before it boils.
Step 7
Serve with sour cream, iceburg lettuce, tomatoes, avocados, and black olives
