Instructions

Step 1
Half the tomatoes and drizzle with plenty of olive oil and salt and pepper. Turn them cut side down and add a few cloves of garlic. Roast at 180 degrees for 35 mins. Dice onion. Fry in olive oil until browned (7 mins). Add tomato puree and fry for a couple of minutes. Put the tomatoes and onions into a blender and blend until smooth. Add a good handful of basil and blend in til chopped not mushed. Add a splash of pasta water when adding to the cooked pasta.
