Ingredients
2 servings

2 tspvegetable oil

2mackerel fillets
or 1 whole mackerel

sea salt

freshly ground black pepper

1 tsproasted sesame seed oil

2spring onions
sliced into very thin 5cm lengths and covered in ice-cold water until curled up

2 tspdried chilli threads
1 red chilli finely sliced, optional

rice
cooked, to serve

kimchi
to serve
Instructions
Step 1
Heat the vegetable oil in a pan over a medium-high heat.
Step 2
Season the fish generously on both sides with a good pinch of salt and pepper.
Step 3
When hot, add the whole mackerel or fillets skin-side down.
Step 4
Fry for 2-3 minutes on one side, using your fish slice to press down on the flesh to prevent it from curling up, then flip over and fry for another 2-3 minutes, depending on the thickness of the fish, until just cooked.
Step 5
Remove from the heat and drizzle over a little sesame seed oil.
Step 6
Serve straight out of the pan with the drained spring onions and chilli threads tangled on top and bowls of rice and kimchi alongside.
