Step 1
Spray 8x8 baking dish with nonstick cooking spray.
Step 2
Press saute on Instant Pot. Once machine indicates hot, add beef. Cook, crumbling beef with a wooden spoon until browned, about 8 minutes. Add onion and garlic and cook 2 minutes. Add taco seasoning and cook 2 minutes until spices are well mixed into meat and are fragrant. Press cancel.
Step 3
Transfer meat mixture to prepared sish and clean out pot.
Step 4
Place rack in Instant Pot and add water. Fold a long piece of aluminum foil in half. Lay foil over rack to form a sling.
Step 5
In a small bowl mix eggs with salt and pepper. Spread cheese evenly over meat, then pour eggs on top of cheese. Place dish on rack and cover with another piece of aluminum foil, tightly crimping edges. Close lid and set steam release to sealing, then press manual and adjust cook time to 7 minutes.
Step 6
Once cooking is complete quick release pressure. Press cancel and open lid. Let dish stand 10 minutes before carefully removing from pot with sling and serving.
