As this meal is only for one, you will probably end up with a leftover chicken breast - once pack open use any remaining meat with 24hrs. Tip - Oven cook the other one at the same time as per pack instructions, will keep for a couple of days in the fridge - once cooled. Left overs will keep in the fridge (once cooled) for a couple of days. 1 wrap makes a good cold lunch. Can be reheated just make sure chicken is piping hot though to the middle.

Instructions

Step 1
Prep - Thinly slice onion and pepper, put in a mixing bowl.
Step 2
Thinly slice the chicken (always keep on a separate part of the chopping board from other ingredients and wash knife before using for anything else.)
Step 3
Add the chicken to the bowl of veg add the seasoning and chlli flakes if using, mix till everything is well coated.
Step 4
Cooking - Heat oil in frying pan over medium-high heat
Step 5
Add the seasoned chicken and veg and stir fry for about 7-10 mins or till the chicken is browned and veg softened.
Step 6
You may have to adjust the heat is it is sticking too quickly.
Step 7
To check the chicken is cooked, find the thickest part and tear in half – if any part is still raw (pink) cook until done.
Step 8
Warm your wraps in the microwave for 40 secs.
Step 9
Add a good dollop of salsa and some salad to your wraps, then add the chicken and veg - Try not to over fill or they'll be hard to roll.
