Step 1
Heat oil in large pot over medium heat
Step 2
● Saute onion, celery, and garlic until fragrant and translucent
Step 3
● Add in broth, tomatoes, potatoes, parsley, bay leaves, thyme, and salt and pepper to taste
Step 4
● Boil lightly until potatoes are soft, approximately 30 minutes
Step 5
● Serve with rolls
