Instructions

Step 1
1. Add chicken carcass and 2 whole carrots to a large pot. Cover chicken and carrots with cold water (approximately 8 cups). Sprinkle in Italian seasoning and salt and bring stock to a boil. Reduce heat and simmer while you prep your ingredients to make the soup.

2. Dice onion, peppers, celery, and garlic. Heat butter in a large soup pot, over medium heat. Add diced vegetables and sauté until they are softened.

3. Season vegetables with Italian seasoning, salt, pepper, and mustard. Stir to combine.
Step 4
4. Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom. Allow the wine to simmer for a couple of minutes.

5. Remove your broth from the stove and strain it into your pot of veggies.
Step 6
6. Remove chicken from carcass and slice carrots. Add to the pot and stir to combine. Adjust seasoning as needed. Allow soup to simmer on the stove.
Step 7
7. Meanwhile, cook your choice of noodles (or starch of your choice) according to the package instructions. Drain and set aside.
Step 8
8. Just before serving, add the cooked noodles to the pot. Stir until well combined and heated through.
