Ingredients

1.5 poundsboneless skinless chicken thighs
3 ozbaby spinach
1 cupparmesan cheese
grated
1 cupheavy cream
0.5sun-dried tomatoes
sliced packed in oil
½ cupchicken stock
4cloves garlic
minced
3 tablespoonsunsalted butter
1 tablespoonoil
from jar of sun - dried tomatoes
2 teaspoonsdried parsley
½ teaspoondried basil
½ teaspoonsalt
¼ teaspoondried oregano
¼ teaspoonground pepper
Instructions
Step 1
Add butter, oil from sundried tomatoes, and garlic to a saucepan over medium heat. Saute for 20 seconds - do not brown it. Pour in chicken stock and heavy cream, simmer for 8 minutes or until thickened. Stir in parmesan cheese and continue to simmer another 3-5 minutes.
Step 2
Add chicken to the slower cooker, and sprinkle basil, oregano, parsley, salt and pepper.
Step 3
Add sun-dried tomatoes on top of the chicken, then pour the sauce over top and cook for 3 hours on high or 6 hours on low.
Step 4
Remove chicken and set it aside, then stir in the spinach and cover until wilted. Serve with the sauce poured over top
