Instructions
Step 1
Line a large roasting tin with parchment paper. It'll make washing up so much easier!
Step 2
Blitz the paste ingredients together in a blender.
Step 3
Tip into a bowl (or direct into the roasting tray) and add the chicken making sure it's completely coated.
Step 4
Add the onions, potatoes and chicken to the tray. Roast for 45 minutes at 200 degrees. Squeeze in the lemon, wilt in the spinach if using
Step 5
finish with fresh coriander.
