Instructions

Step 1
For the meatballs: Combine bread and buttermilk in small bowl and let stand, mashing occasionally with fork, until smooth paste forms, about 10 minutes.
Step 2
Place ground meat, cheese, parsley, egg yolk, garlic, salt, and pepper to taste in medium bowl. Add bread-milk mixture and combine until evenly mixed.
Step 3
Shape 3 tablespoons of mixture into 1 1/2-inch-round meatball. (When forming meatballs use a light touch. If you compact the meatballs too much, they can become dense and hard.) You should be able to form about 14 meatballs
Step 4
Add oil to Frying Pan and set temp to medium high. Allow it to warm until it sizzles when a meatball is placed in it. Place meatballs in the pan in a single layer, turning to Brown evenly on all sides. When the meatballs are brown, remove them from the skillet and place on a paper towel.
Step 5
Bring 4 quarts of water to a boil.
Step 6
Remove the oil from the skillet and add the olive oil and garlic. Stir, scraping up any brown bits left in the pan.
Step 7
Add tomatoes to the skillet and bring to a boil. Let simmer for 10 minutes.
Step 8
Add the basil and salt and pepper. Place meatballs in the skillet. Stir so that all are covered with sauce. Leave to stay warm.
Step 9
Place the spaghetti in the boiling water and cook al dente.
Step 10
Serve with two to three meatballs and fresh parmesan
