Instructions
Step 1
Add 10ml oil to a small pot and sweat off the onions and garlic.
Step 2
Then add cannellini beans and potatoes to the pot and cover with 500ml of stock and simmer gently with lid on for 25mins.
Step 3
Allow to cool slightly before you blend the soup using a hand or jug blender.
Step 4
Return the soup to the pot and use the remaining 200ml of stock to correct the consistency as desired.
