Instructions
Step 1
Step 1 Preheat the oven to 200°C.
Step 2
Boil the sweet potato in a pan of salted water until softened then drain thoroughly.

Roughly mash with a fork and set aside.

Step 2 Meanwhile heat the oil in a frying pan, add the onion and ginger and fry for 5 minutes until soft.

Add the spices and peas, fry for 2-3 minutes then add the protein powder and a splash of water.

Remove from the heat, roughly crush the peas with the back of a fork then tip into the bowl with the sweet potato and mix together.

Stir in the coriander and season to taste.

Step 3 Cut each sheet of filo lengthways into 3 strips then put a spoonful of the filling at one end of a strip of pastry.
Step 9
Fold the closest right hand corner over to the left to form a triangle, then fold again in the opposite direction.
Step 10
Keep repeating this along the length of the pastry to form a neat triangular parcel.
Step 11
Brush the final edge with butter and press to seal.
Step 12
Step 4 Repeat with the remaining filo and filling then transfer the samosas to a non-stick baking tray.
Step 13
Brush the tops with the remaining butter then bake for 25 minutes until golden.
Step 14
Leave to cool slightly before serving.
