Pasta with Parmesan cream

Instructions

Step 1
In a saucepan, gently simmer the cream, cheese rind and bay leaves, stirring, until slightly thickened and reduced to 2 cups. Off heat, remove and discard the cheese rind and bay.
Step 2
Whisk in the lemon juice; the mixture will thicken slightly. Whisk in the cheese a handful at a time until smooth, then whisk in 1 teaspoon salt and 1⁄2 teaspoon pepper; set aside, uncovered.
Step 3
In a large pot of salted boiling water, cook the pasta until al dente. Reserve 1⁄2 cup cooking water; drain and return to the pot. Pour the sauce over the pasta; toss, adding cooking water to thin. Season with salt and pepper.
Step 4
Optional garnish: Thawed frozen green peas or chopped fresh herbs
