Instructions

Step 1
In a food professor, add your old bread (previously diced) and mix for 90 seconds.
Step 2
Add spinach and mix for 30 more seconds, then add eggs, flour, salt and pepper and mix for a minute or until smooth. You should have a sticky dough.
Step 3
Flatten 1 tablespoon of dough with your hands then add 1 teaspoon of mozzarella in the middle.
Step 4
Close your gnocchi into a ball and boil in some salted water for about 10 mins or until your gnocchi come to surface.
Step 5
In the meantime, sizzle some chopped garlic with butter (50g) for 60 seconds, add heavy cream and simmer for 5 mins or until your sauce thickens.
Step 6
Season with salt and pepper.
Step 7
In the meantime, melt the remaining butter (65g) in a pan and set aside.
Step 8
Serve your gnocchi with a couple of tablespoons of your white sauce at the bottom of your place, some melted butter and Parmigiano on top.
