Instructions

Step 1
Preheat the oven to 200°C.
Step 2
Halve, peel and thinly slice 1 red onion. Peel and mince 3 cloves of garlic.

Peel and cut 3 medium sweet potatoes into bite-sized chunks.
Step 4
Chuck 3% of the onion into a large roasting tray along with the garlic and the sweet potatoes.

ASSEMBLE

Tip in 1400g tin of tomatoes and 1 400g tin of cannellini beans - no need

to drain it.
Step 8
Add 1 tsp of sugar and 1 tbsp of paprika, season with a generous pinch of salt and give everything a good mix in the tray.

BAKE IT OFF

Whack the whole tray into the oven and bake for 20-25 minutes, until the potatoes are soft and the tomatoes have reduced to a thick sauce. Chop 15g of coriander while you wait.

SERVE
Step 12
Once the traybake is ready, scatter over the reserved onion and coriander and spoon on the sour cream. Tuck in!
