Step 1
Heat Olive oil in Pan over medium heat. Add. Add 3 vegetables. Saute veggies for 3 to 5 minutes tossing frequently. Add garlic, continue to toss till crisp about 2 minutes. Add chicken stock, butter and lemon juice, and saute for 2 to 3 minutes until tender. remove pan from heat heat fold in lemon zest, salt, pepper & parsley.
