I love a frittata for breakfast, brunch or dinner! It’s perfect anytime! A frittata a crustless quiche. It’s an egg-bake filled with yummy vegetables, seasoning and cheese. Very versatile to switch out the veggies!

Preheat oven to 350°

In an oven safe skillet sautée the asparagus, onion and zucchini until soft in the olive oil.

Whisk the remaining ingredients together except for the cheese. Pour the mixture in the skillet and cook 2 minutes.
Step 4
Sprinkle the cheese over the top

Bake for 15 minutes or until the eggs are set.
