Instructions
Step 1
First, cut your flank steak into big pieces to fit in your pot/dutch oven. Cut against the grain for easy shredding later.
Step 2
Season with salt and add to a high-heat Dutch oven coated with oil. Cook on both sides until just browned and remove the beef.
Step 3
Add in sliced onion and sliced bell pepper, along with some salt. Stir fry until the onions are soft.
Step 4
Add garlic and stir fry for an additional minute.
Step 5
Optionally, deglaze the pan with a splash of wine.
Step 6
Add tomato paste and your can of tomatoes, followed by your chicken broth.
Step 7
Add all your seasonings and incorporate them before adding your browned steak back in.
Step 8
Cover with a lid and simmer for 2 hours.
Step 9
After 2 hours, you can take out the steak and shred it using 2 forks. Add the shredded beef back to the pot.
Step 10
Add green olives, and simmer everything for an additional 2-3 minutes.
Step 11
Serve with rice and black beans. Enjoy!
