Step 1
1. Slice the mushrooms, finely chop the garlic, dice the onion and cut the artichokes into bite size chunks.

2. Put all of the above into a big pot and pour in the veggie stock, throw a bunch of thyme and oregano in, add a splash of olive oil and break the pasta in half and put it in. Crack a lot of pepper in, push everything into the liquid and put the lid on and wait to boil.

3. Once it boils immediately turn to low and simmer while stirring everything up. Put the lid back on and stir every few minutes for about 15 minutes of most of the liquid has absorbed.
Step 4
4. Chuck the spinach in and mix it around to let the heat wilt it for a minute.
Step 5
5. Serve up and crumble some feta and chilli flakes over the top. Season with more salt and pepper.
