TACOS GOBERNADORES 🌮 hands down my favorite way to enjoy shrimp tacos so I had to make a macro friendly version! This is perfect for meatless Friday’s for cuaresma as well!

Instructions

Step 1
1. In a small bowl, mix 2 tbsp of lite mayo, 1 minced garlic clove, 1/2 tbsp jalapeño mustard, and chopped chipotle peppers in adobo sauce. Put to the side.

2. Chop all vegetables and mince garlic.
Step 3
3. Melt 3 tbsp of margarine or butter to a pan and add the chopped onions & poblano peppers. Cook for 4 minutes, stirring frequently.
Step 4
4. Add in 2 minced garlic cloves and cook for 2 minutes.
Step 5
5. Add in tomatoes and chipotle mayo. Cook for 4-5 minutes.
Step 6
6. Add in shrimp and cook for 3-4. Once they are pink they are cooked thoroughly. This mix makes 4 servings.
Step 7
7. One serving of tacos: Lightly dip 4 tortillas on top of the shrimp mixture to give it a red color.
Step 8
8. Grease a comal with avocado oil spray and warm up the tortillas for 30 seconds on each side.
Step 9
9. Add 14 G of fat free cheese & about 1.5 oz of shrimp mixture to each tortilla.
Step 10
10. Warm until the cheese has melted.
Step 11
11. Serve with any topping(s) or side(s)of choice.
