Homemade pita: you may never buy store-bought again! Makes 8 pita (about 5 inches dia) 2 ¼ cups all purpose flour ½ cup whole wheat flour* 2 tsp kosher salt 1 tsp granulated sugar 1 ¼ cups lukewarm water 2 ¼ tsp fast-acting yeast (I use Fleischmann’s Quick Rise) 2 Tbsp vegetable or olive oil *If you don’t have whole wheat flour on hand, replace it with all-purpose flour. Combine the flours, salt and sugar in a medium bowl. In a cup, mix together the water, yeast and oil. Pour the liquid over the flour and mix unti combined. Knead until smooth. Place the dough in a lightly-oiled bowl, cover and allow to rise for about an hour, or until doubled. Preheat a pizza stone or heavy baking tray in a 475 F oven. Divide the dough into 8 portions (or 6 if you prefer larger pita); shape into balls. Roll each on a floured surface until about ¼-inch thick. Carefully place the dough on a hot pizza stone (or baking tray) for a few minutes untl puffed. I keep my oven light on–and I don’t bother to turn the pita over. If you prefer a darker, firmer crust, leave the pita in the oven longer. Alternatively, remove the pita from the oven and brown in a hot dry skillet. Enjoy!👩‍🍳
