Instructions
Step 1
Add all ingredients into a big pot and pill with enough water to cover the meat. (Add an extra cup or two or water if you feel you need more for the broth)
Step 2
Add a hefty pinch of salt. Skim the top of broth to get rid of foam, cover and cook for 1 hour.
Step 3
After an hour take out chiles, onions, garlic and some broth from the pot and add to blender.
Step 4
Add all the extra blender ingredients and mix for 1 to 2 minutes until smooth. Add mix back into the beef broth
Step 5
Boil 2 tomatoes and puree them. Add them to pot with rest of ingredients and cook for another 2 hours.
Step 6
Take meat out of broth and strain broth
Step 7
Place meat into a bowl (not back in broth) and assemble tacos. Dip corn tortillas into consume, fill with meat, cilantro, onion and cheese and fry lightly on medium heat
