Step 1
Bake sweet potatoes in the oven Fry onion, chilli and pepper until soft 6-8 minutes
Add garlic, chilli powder, smoked paprika and cumin and combine so the veggies are coated with spices
Add chopped tomatoes, beans, lentils and stock.
Reduce to a low heat and leave to simmer gentle until most of the stock is absorbed and the lentils are soft. Slice open sweet potatoes and top with chilli, sour cream and grated cheese.
