Coffee Walnut Loaf

Instructions

Step 1
1. Preheat oven to 325°F. Grease and line a 4½-inch x 10-inch loaf pan.

2. Stir butter, sugar, milk and coffee in a small saucepan over low heat until melted. Remove from heat.

3. Chop half the walnuts. Sift flour and cinnamon into a medium bowl; stir in eggs, butter mixture and chopped walnuts. Pour mixture into pan.

4. Bake loaf 15 minutes. Top loaf with remaining walnuts; bake 30 minutes longer or until a skewer inserted in the center comes out clean. Turn loaf, top-side up, onto a wire rack. Cool.

5. Make Coffee Icing.

6. Drizzle icing over loaf; let stand until set. Slice and serve with butter if desired.

Coffee Icing

Step 7
Combine coffee and the water in a bowl. Sift confectioners’ sugar into a small heatproof bowl; stir in butter and enough of the coffee mixture to form a firm paste.
Step 8
Place bowl over a small saucepan of simmering water; stir until icing is a thin consistency.
