Instructions
Step 1
In a large pot, heat coconut oil and saute fennel for about 10-12 minutes, or until saoft

Add beets, carrots, herbs, and broth. Cover pot and bring to boil, then turn down to a simmer.

Simmer for about 1 hour or until beets are tender.

Transfer contents of the bot to a food processor or high-powered blender. Blend until smooth, adding more broth as needed (try immersion blender)

Serve warm.
