This vegetarian remix packs a lot of flavor without relying on chicken broth to do the heavy lifting. I enjoyed this with a batch of parmesan ciabatta.

Ingredients

The cabbage
1 pkgimpossible meat
1 ½ cupsonion
chopped
4cloves garlic
minced
1 headcabbage
chopped
2 x 14.5 ozcans fire-roasted diced tomatoes
1 x 15 ozcan no-salt-added tomato sauce
1 x 10 ozmatchstick-cut carrots

3 cupsbroth
1 tspcrushed red pepper
½ tspground cinnamon
2 Tbsplightly dried parsley
1 tspumami powder
or salt
1 tsppepper
2 tsppaprika
2bay leaves
1 Tbspfresh lemon juice
honey

The bread
Instructions
Step 1
Cook diced onion until it begins to turn translucent, add Impossible Beef and brown.
Step 2
Add garlic and cook for 2 minutes, add all to crock pot (or if you have an Instant Pot, you can start the whole process in there)
Step 3
Add chopped cabbage, you may not need or be able to use the entire head, depending on the size of your pot, or your cabbage!
Step 4
Add tomatoes, tomato sauce, carrots and at least 1 cup of broth and stir. You may want to add up to 3 cups, depending on how much cabbage you have and how soup-like you want your final product
Step 5
Add remaining ingredients except honey and lemon, and stir well.
Step 6
Cook on medium (or low in Instant Pot) for at least 4 hours
Step 7
Before serving, add lemon juice and if a bit more sweetness is desired, add up to a tbsp of honey
Step 8
Discard Bay Leaves before serving
The bread
Step 9
Cut Ciabatta baguette in half, then cut slashes (almost but not completely through) the bread about every 1.5 inches.
Step 10
Spray generously with olive oil and toast in 400 degree oven for about 10 minutes or until browning begins
Step 11
Top with desired amount of parmesan flakes and broil for 1 or 2 minutes until cheese begins to melt
Step 12
Top immediately with parsley
