Step 1
Heat oil in sm. skillet on med.-low. Add chorizo, cooking (10 min.) until browned, breaking up lg. pieces. Remove cooked chorizo from pan & place on paper towel-lined plate.
Step 2
Place skillet back on stove. Add onions & garlic, cooking (5 min.) until onions are translucent. Add peas & cook (3 min.), stirring occasionally. Stir in cooked chorizo.
Step 3
Remove pan from heat; stir in mint.
Step 4
Serve over rice & top with crumbled Cotija cheese
