Tomato Lentil Soup - Instant Pot

This simple + easy soup is one of my go-tos for days when I can’t decide what I want it eat! It uses mostly things you probably have on hand in your pantry or fridge and comes together in less than 20 minutes. It is best served with a grilled cheese on a chilly day!

Step 1
Turn instant pot to sauté mode and add olive oil and onions. Sauté for 2 minutes then add garlic, tomato paste, Italian seasoning, smoked paprika, chili flakes and herbamare. (Note: if you dont have herbamare replace wit 1/2 tsp salt) Sauté for another two minutes then add lentils, tomatoes, and broth. Turn instant pot off sauté mode, put the lid on and seal the steam valve. Set pressure cooker to pressure cook on high for 10 minutes.
Step 2
When the cooking time is up, open the steam valve to release the pressure then remove the lid. Add in chopped spinach and cream. (Note: you can use milk or coconut cream too) Blend until smooth & enjoy!
