Tabbouleh originates from the Middle East and is a delicate mix of grains, vegetables and fragrant herbs. The traditional dish uses bulgur wheat, but this version uses quinoa which is a naturally gluten free and a complete protein. Quinoa is considered a complete protein, meaning it contains all of the essential amino acids the body needs. Enjoy this dish with grilled chicken, fish or other protein source.
Key to this dish is to chop your veg really small, chop the herbs super fine and season it well. It’s a great dish for mindful prep.

Step 1
Prepare your quinoa by cooking it, or use a pre-cooked vac packed variety.
Step 2
Finely chop the fresh herbs and slice the onion.
Step 3
Dice the cucumber and tomatoes
Step 4
Make up the dressing and shake t well in a jar.
Step 5
Put everything together in a bowl, season it, and combine all the ingredients well.
