Instructions
Step 1
Preheat convection oven to toast

Heat 1 tbsp olive oil in a pan
Step 3
Add in 1/2 diced white onion and sauté
Step 4
After about 5 minutes, add cumin and lime juice, mix, and continue to let cook

Add 1-2 tbsp diced hatch chiles

Meanwhile, slice olives and finely chop cilantro
Step 7
Remove onion mixture from heat and set aside

Add other tbsp of olive oil to the pan, crack and scramble eggs in the pan. Let cook for a few minutes

Add cheese and continue to scramble

Meanwhile, add tortillas to convection oven and allow to warm
Step 11
Remove tortillas and squeeze juice of one lime wedge and spread around. Top with 1/2 of the eggs, onion mixture, olives, drizzle of crema, cilantro and cotija cheese. Top with green tabasco
