Dutch Potato Scramble

Instructions

Step 1
Slice potatoes into cubes to fill 2 cups (1 lb.) Dice onions and ham.
Step 2
Cook potatoes with 2 c. water in a covered medium bowl in microwave. Microwave for 6 minutes if using a 900 W microwave; 4 minutes if using a 1200 W. Meanwhile, slice spinach, whisk eggs, and heat olive oil in medium skillet over medium heat.
Step 3
When potatoes are cooked (easily forked), drain and combine with meat and onion in bowl. Add all spices to the bowl and mix.
Step 4
Put the mixed potatoes, meat, and onion in hot skillet and saute for 4 minutes. When onions are soft and clear, add whisked eggs and scramble for 1 minute. Then stir in spinach and cook until just wilted, about 1 minute.
Step 5
Add in shredded cheese and stir for 30 seconds until it starts to melt into the scramble. Immediately remove from heat and plate. Serve with hot sauce on top or in a warmed tortilla as a burrito.
