Ingredients
5 servings
3cloves garlic
minced
3 tablespoonshoney
1 teaspoonorange zest
finely grated
¾ cuporange juice
preferably fresh but not necessary
⅓ cupreduced-sodium soy sauce
3 tablespoonsrice vinegar
3 tablespoonscornstarch
1 tablespoonfresh ginger
finely minced, peeled
freshly ground black pepper
to taste
1 poundsskinless boneless chicken breasts
or thighs, cut into 3/4-inch pieces
kosher salt
or coarse
2 tablespoonsextra virgin olive oil
4scallions
white and light green parts, sliced
rice
Hot, cooked, brown or white, or quinoa, for serving
toasted sesame seeds
for serving, optional
0.5 lbextra firm tofu
cut into 3/4 inch pieces for vegetarian version
Instructions
Step 1
Whisk together the garlic, honey, orange zest and juice, soy sauce, rice vinegar, cornstarch, ginger, and pepper in a small bowl.
Step 2
Set the sauce aside.
Step 3
Season the chicken & tofu lightly with salt and pepper.
Step 4
Heat the oil in 2 skillets or a wok over high heat.
Step 5
Add the chicken and sauté until it starts to turn white, 3 minutes. Cook tofu 3 minutes without moving it to brown. Flip & repeat.
Step 6
Add the sauce and scallions and cook until the sauce thickens and the chicken is cooked through, 3 to 4 minutes more.
Step 7
Serve over hot rice or quinoa, with the sesame seeds sprinkled over if desired.
