Garlic & Pine Nuts Spaghetti

A simple pasta dish for lunch or dinner. Nothing fancy or heavy. Just tasty. Pasta spaghetti with garlicky butter and toasted pine nuts, with optional grated cheese.

Step 1
Bring a large pot of lightly salted water to a boil. Cook the pasta at a boil until tender yet firm to the bite, about 10 minutes, drain (reserve 1 cup of the pasta water) and transfer pasta to a large bowl.
Step 2
Heat a medium skillet over low heat, add in the olive oil, add garlic and sauté for about 5 minutes, or until the garlic begins to become golden. (Make sure not to burn the garlic here, You need it to cook slowly), add in all of the herbs, pine nuts and stir through, allowing them to cook for about 1 minute.
Step 3
Add in the cooked pasta along with about 1/4 cup of pasta water, (optional vegan parmesan cheese), fresh lemon juice and zest, toss everything together until uniform, (may add in 2 to 4 tbsp more if the pasta water if the pasta seems too dry).
Step 4
Season pasta with seasoned salt, garnish with fresh thyme and (optional grated vegan parmesan cheese).
