Instructions
Step 1
Wash and chop onion, mushrooms and leeks (optional)
Step 2
Pat the mushrooms thoroughly dry.
Step 3
Heat 1 tbsp oil and 1/2 tbsp butter on a skillet on medium heat
Step 4
Add in mushrooms and sauté for approximately 5 minutes, then transfer to a bowl. If want crispy, sauté for longer.
Step 5
Heat one tbsp butter and a dash of oil on the skillet (keep on medium high)
Step 6
Add in onion, thyme, salt/pepper, garlic powder and sauté until soft (around 5 mins).
Step 7
Once soft, lower heat to medium low to start caramelizing. (takes ~30 mins) Check every 5 mins.
Step 8
Half way in, add 1-2 tbsp of balsamic vinegar to deglaze
Step 9
Once caramelized, reduce or stop heat and add mushrooms back to the pan to combine briefly.
Step 10
Optional: Heat some butter, then add in leeks with salt/pepper. Cook until soft (colour to stay mostly green; approx. 5 mins)

Preheat oven to 400 degrees
Step 12
After thawing puff pastry overnight, add a sheet to a baking tray, make your design and then egg wash edges.
Step 13
Order: 1) Gruyère cheese, 2) entire mushroom/onion mixture, 3) sprinkle leeks, 4) bit more Gruyère.
Step 14
Bake in the oven for 20-25 minutes
Step 15
Once baked, let cool and sprinkle some feta mixed with 1/2 tsp lemon on top before serving.
