Step 1
Pre-heat oven to 180 degrees
Step 2
Whisk eggs in large bowl.
Step 3
Add cream and milk to eggs, whisk well.
Step 4
Add grated carrot and chopped onion and bacon to egg mix. Mix well.
Step 5
Roughly chop mushrooms and spinach.
Step 6
Add mushrooms and spinach to bowl. Mix well.
Step 7
Add tomato. Gently mix.
Step 8
Add half of oil, garlic and salt and pepper to taste.
Step 9
Add half of cheese.
Step 10
Use remaining oil to oil a glass dish.
Step 11
Poor mixture into dish, push down firmly
Step 12
Top with remaining cheese
Step 13
Bake for 40- 50 minutes or until well cooked.
Step 14
Allow to cool slightly before serving
