I like to make shopping & cooking as easy as possible with ingredients so I created these measurements according to available shopping sizes.
It fills my Instapot so my guess is 8+ servings ?!?
My husband and I eat it about 3x per batch if that helps for meal planning & leftovers.
Total time is at least an hour BUT WORTH IT .

Ingredients
8 servings

1 lbItalian sausage
ground mild, Spicy can be substituted

8 slicesbacon
chopped up

1sweet onion
medium, diced

4 clovesgarlic
minced, I love garlic so I do A LOT

64 ozchicken stock

6russet potatoes
large, cut into thick slices

salt
to taste

pepper
to taste

red pepper flakes
Optional & EMPHASIS ON PINCH !

16 ozheavy whipping cream

1 BagKale
chopped, NOT FROZEN

Shredded parmesan cheese
to garnish
Instructions
Step 1
Brown the italian sausage and drain grease
Step 2
Cook bacon. I do this in the oven on a bacon pan to minimize grease & try to get it as crispy as possible without burning it. Chop into small pieces
Step 3
In a stove pot or Instapot - add diced onion, garlic, meat, broth, sliced potatoes, salt & pepper, PINCH of red pepper flakes
Step 4
Either, boil with lid long enough for potatoes to cook or select the soup/broth option on the Instapot
Step 5
Release pressure ( Instapot )
Step 6
Add heavy whipping cream and kale . For the kale, I do roughly a 50% ratio to the soup … makes it fuller and gives it a yummy crunch :)
Step 7
Top your bowl with shredded parmesan cheese
