Ingredients

2 Tblsextra virgin olive oil
2 x 1 lbturkey breakfast sausage
pkg, ground, rolls
1 cupyellow onion
diced
4 cupsmushrooms
sliced
2 cupsbaby spinach
packed
2 cupsfrozen chopped broccoli
thawed and drained
12eggs
large
12 ozMonterrey jack cheese
shredded
2 cups2% reduced fat milk
1 Tblskosher salt
2 tspblack pepper
2 tsphot sauce
6biscuits
previously baked, chopped
Instructions
Step 1
Oven 350* ,spray coat 13x9 baking dish , heat oil in Dutch oven on medium high, add sausage cook until browned ,drain, place sausage in bowl, add onion cook translucent, add mushrooms and cook, remove from heat add spinach and broccoli, stir. Whisk together in bowl milk ,eggs ,cheese, salt pepper and hot sauce. Pour over sausage mixture, stir. Put chopped biscuits evenly over bottom baking dish, pour sausage egg mix on top of biscuits pat down w spatula. Cover with foil, bake 1 hour, then uncover bake until firm to touch . Let sit 10 min.
