Ingredients

For the marinading the steak
0.5 Lbchuck pot roast
cut into cubes
salt
to taste
pepper

1juice of lime
1 tspgarlic powder
½ tspginger powder
The epis ( green seasoning)) blend everything together
2green onion
0.5yellow onion
4cloves garlic
parsley

Juice
0.25distilled white vinegar
¼ cupwater
1 Tbsphot sauce
1 tspcayenne pepper

1 Tbspchicken bouillon powder
For the stew
1 Tbspoil

8mini Yukon gold potatoes
cut in half
2carrots
sliced diagonally

large, sliced
4garlic gloves

2 Tbsptomato paste
2 Tbspunsalted butter
0.5red wine
Cabernet Sauvignon
1 ¼ cupbeef stock
¼ tspcayenne pepper
Dry thyme

0.5 tapchicken bouillon powder
0.25red pepper flakes
8 ozbroccoli florets
Fresh parsley
finely chopped, enough for garnish as well
Instructions
Step 1
Prep all your ingredients as explained! Use the epis marinade as needed when adding to the steak.
Step 2
In large pot over medium hear add the oil. Once hot the meat searing on all sides before removing.

After searing & removing the meat. Add the potatoes, carrots and onion. Season with salt & pepper and sauté for a few minutes.

Add the minced garlic & tomato paste. Sauté until fragrant before add the butter followed by the red wine.

Step 5
Add the meat back into the mix. Mix , then add the beef stock. Season with the listed spices. Cover & allow to simmer on medium low heat for 30 minutes.

Add the broccoli and freshly chopped parsley. Simmer for another 8-12 minutes.

Serve over white rice or mashed potatoes, garnish with the finely chopped parsley and enjoy!
