This recipe for vegan stew is a delicious version of this Flemish classic. If you don't like seitan that much, you can also replace it with vegan chicken. You can add more soy sauce, mustard or brown sugar to taste.

Instructions

Step 1
Place the onion well in advance - about half an hour - on a low heat with some sunflower oil and stir frequently. It is best when the onion is slightly browned and caramelized.
Step 2
Add the seitan and garlic to the onion and stew for about 5 minutes.
Step 3
Add the rest of the ingredients, except the corn starch, and stir well. Let this simmer on a low heat, preferably longer than an hour, so the flavors develop well. At the last, you may want to add some vinegar to make it more acidic, sugar to make it sweeter, or soy sauce to make it saltier.
Step 4
Add the cornstarch and water and continue to simmer, stirring, for 5 minutes.
Step 5
Serve with fries or oven fries or croquettes and some veganaise if desired.
