Ingredients
4 servings
Char Kway Teow
1 tablespoonvegetable oil
3 clovesgarlic
finely chopped
30shrimp
peeled
400grice noodles
cooked and drained
450gcockles
or clam extracted from shells
170gbeansprouts
rinsed in cold water and well drained
3eggs
large
1 bunchspring onion
cut into pieces of 2 inches, 5 cm
Chilli Paste
1 ozdry red chili peppers
deseeded and rehydrated
2red chili peppers
fresh, deseeded
3shallots
small, or pearl onions, peeled and thinly sliced
1 tspvegetable oil
Sauce
Instructions
For the Chilli Paste
Step 1
Blend all the chilli paste ingredients to make a paste.
Step 2
Add the oil to a hot wok. Sauté the chili paste until it releases its aroma and set aside.
For the Sauce
Step 3
Mix all the sauce ingredients well and set aside.
For the Char Kway Teow
Step 4
Heat a wok over high heat until it starts to smoke. Then add the oil and half of the garlic and stir quickly to prevent it burning
Step 5
Add half of the shrimps and stir until they start to brown
Step 6
Add half of the soy sprouts and half of the noodles.
Step 7
Add 2.5 tablespoons of sauce and stir vigorously to mix well.
Step 8
Using a wooden spoon, push the noodles to one side, and break an egg over it. Use a spatula to break the egg yolk and stir to mix with the egg white. Cover the egg with noodles and wait about 15 seconds.
Step 9
Add about ½ tablespoon of chili paste and half of the cockles or clams.
Step 10
Continue sautéing for a few minutes and then add the spring onion.
Step 11
Repeat with the remaining ingredients.
