Step 1
Preheat oven to 350°F. Spray a 3 quart baking dish with cooking spray.
Step 2
In a Dutch oven, melt butter over medium heat. Add flour and pepper; cook, whisking constantly, for 2 minutes. Gradually whisk in broth. Cook, whisking frequently, until thickened and bubbly, 8-10 minutes. Gradually stir in mozzarella, Monterey Jack, and provolone until melted. Stir in pasta until well combined. Pour mixture into prepared pan.
Step 3
Bake for 25 minutes. Top with Colby Jack cheese, and bake until cheese is melted, about 10 minutes more. Let stand for 10 minutes before serving.
