These Harry Potter inspired cookies are absolutely magical! The combination of vanilla & butterscotch topped with a whipped "foam" frosting makes this a cookie perfect for wizards & muggles alike!

Ingredients

1 ½ cupssalted butter
softened
1 cupbrown sugar
½ cupsugar
2eggs
¼ cupcanola oil
3 tspvanilla
2 tspbutterscotch flavor
4 ½ cupsAP flour
3 tspbaking powder
8 dropsred food coloring
optional
4 dropsyellow food coloring
optional
2 dropsblack food coloring
optional
2 cupscream
1 cuppowdered sugar
½ tspbutterscotch flavor
¼ cupbutterscotch ice cream topping
Instructions
Preheat oven to 350°F
Step 1
In mixer, cream together butter & sugar (1 min.)
Step 2
Scrape sides of bowl; add in eggs, oil, vanilla & butterscotch flavor. Mix until well-combined.
Step 3
Add in flour & baking powder; mix until soft dough forms.
Step 4
Add food coloring, mixing until completely combined to achieve correct 'butterscotch' color. (This is completely optional.)
Step 5
Scoop cookie dough in a heaping 1/3C portions. Roll each scoop into ball & flatten just slightly. The cookies will spread & flatten as they bake.
Step 6
Arrange on parchment paper or silicone baking mat-covered pan. Place 6 cookies on each tray. Bake (14-16 min.) until cookies spread & center of cookie is puffed up, & no longer wet.
Step 7
Remove from oven; cool completely before making topping.
Butterbeer Foam Topping
Step 8
Add cream; whip on med.-high until it starts to thicken.
Step 9
Slow speed; gradually add powdered sugar & butterscotch flavoring. Once all powdered sugar has been added, increase speed to high & whip to stiff peaks.
Step 10
Divide topping among cookies; spread to cover top. Use back of a spoon to make dips in topping for texture.
Step 11
Drizzle butterscotch ice cream topping on top of foam. Serve Chilled.
