Instructions

Step 1
Melt the butter in the instant pot. Saute, medium.
Step 2
Cook the rice for a minute.
Step 3
Add all the coconut milk, regular milk, sugar, vanilla, pinch of salt.
Step 4
Set the instant pot to high pressure for 6 minutes.
Step 5
Quick release the pressure. BUT you must cover the exhaust. It will try and spit out milk. Pay attention or live in a mess.
Step 6
Let it cool for a while. Prepare an egg yolk and milk mixture. About 1tbsp per yolk.
Step 7
Once slightly cooled, mix in the yolk mixture.
Step 8
Adjust to taste and then portion in ramekins. Cover with plastic and chill in the fridge.
Step 9
Add some chopped up fruit as a topper. Mango, peach, etc. Mixed with a spice like cinnamon or five spice.
