Indulge in the sweet and tropical flavor of mango with these delicious Hong Kong style mango pancakes. They are essentially mango and cream filled crepes. Perfect for breakfast, brunch, or dessert!

Pancake Batter
1 cupcake flour
2 Tbspsugar
3eggs
large
1 cupfull fat milk
warm
3 Tbspbutter
melted
3 dropsyellow food coloring
optional

Instructions
To make the pancake/crepe,
Step 1
To make the batter, start by placing milk in a bowl along with the cake flour, sugar eggs, melted butter and milk. Whisk until lump free, then add food coloring (optional) and whisk until well combined. The batter should be very thin and watery.
Step 2
If your batter is lumpy, you can run it through a sieve to remove the lumps.
Step 3
Let the batter sit at room temperature for 30 minutes, then give it a quick mix to ensure the cake flour is evenly distributed.
Step 4
In a pan over low heat, pour some batter in the center of the pan and swirl the pan around to create a thin even layer. Let it cook for 60-90 seconds or until the surface is dry.
Step 5
Loosen the edges of the pancake with a spatula and flip it onto a plate.
Step 6
Let the pancakes cool for 30 minutes before filling.
Step 7
Repeat these steps until you use up all of your batter.
To make the whipped cream,

To make the whipped cream, whip together heavy cream and sugar until you reach firm peaks. Set this aside.
To assemble the mango pancakes,

To assemble the mango pancake, place the side of the pancake that came into contact with the pan facing up.
Step 10
Place a piece of mango onto the pancake followed by a generous portion of whipped cream.
Step 11
Fold in the edges to cover the mango and whipped cream.
Step 12
Flip the mango pancake and place the seam side down.
Step 13
Slice and enjoy immediately!
