Creamy Broccoli and Potato Soup

Instructions
Step 1
Chop onion and add to melted butter in a pot. In the meantime, chop garlic and a potato. Add garlic when onions are softened and stir for a minute. Add shredded carrots and celery if desired.
Step 2
Add potato, half of the bouillon and water to cover to pot. Reserve some chopped potato for texture. let simmer to tender.
Step 3
Chop broccoli and cube stems while potatoes cook. Peel the stems with a potato peeler.
Step 4
Blend potato mixture in vitamix with minimal liquid to obtain gummy texture. Meanwhile, in the empty pot, Set broccoli stems and reserved potato cubes to boil with bouillon and water just to cover. Let simmer to tender.
Step 5
Add some cooked broccoli stems to vitamix and blend to creamy. Add more stems and pulse to desired texture. Add potato & broccoli purée back to pot.
Step 6
To pot, add broccoli tops and mix. Let cook to tender.
Step 7
Roughly blend to desired texture with stick blender. Finish with cream or milk if desired.
Step 8
Add spices and toppings as desired: nutmeg and pepper; chedder and bacon; parmesan and olive oil.
