Prep

Step 1
Make sure your cheese melts well. It can be one type of cheese or a blend, as long as it will melt. You should also reach for a block of cheese and shred it yourself since pre-shredded cheeses use powders to keep them from sticking together.
Step 2
Finely shred the cheese. The finer your cheese is shredded to begin with, the easier it will melt.
Step 3
Mince garlic and pre-measure ingredients. This cooks fast and can burn easily.
Step 4
Melt butter in medium sized sauce pan, whisk in flour and cook until it forms a thick paste - only about a minute
Step 5
Stream the milk in slowly, whisking as you pour. Let sit until it thickens and is almost a foamy-type of texture. This happens pretty quickly as well so don't go anywhere.
Step 6
Add beer, worcestershire, dijon, and cream cheese. Whisk until cream cheese is melted.
Step 7
Pour cheese in steadily so it doesn't clump in one spot and burn. keep stirring until it is melted.
