Ingredients
8 servings
1 poundchicken breast
cut into 1-inch cubes
3green onions
3cloves of garlic
1red bell pepper
cut into thin 1-inch strips
2 cupsgreen beans
cut into 1 - inch pieces
1 x 20 ozcan of pineapple chunks in pineapple juice
olive oil

Instructions
Sweet and Sour Chicken
Step 1
Thinly slice green onions. Separate whites from greens. Peel and press or grate garlic.
Step 2
Heat a drizzle of oil over medium-high heat. Add chicken; cook 4-6 minutes.
Step 3
Add garlic and green onions; cook until fragrant, 30-60 seconds. Add green beans and cook 2-3 minutes until bright green.
Step 4
Drain pineapples, setting aside 2/3 cup of the juice for later. Add pineapples and bell pepper to the pan; cook for 2-3 minutes or until peppers are tender and pineapples start to caramelize.
Step 5
While pineapples are cooking, combine the pineapple juice, brown sugar, ketchup, rice vinegar, and soy sauce together in a small bowl. Mix until well combined.

Reduce heat to medium. Add pineapple juice mixture to pan. Cook for 3-5 minutes until sauce starts to thicken. Mix water and cornstarch together, then add to pan. Cook for 1 additional minute, stirring constantly, until the sauce thickens completely.

Serve over rice or chow mein
