Step 1
Mix the lime juice, honey, avocado oil, cayenne, and salt in a large bowl. Set aside.
Step 2
Slice the bell peppers extra finely (it is one of the secrets of this recipe). Use a mandoline if you have one. I like my bell pepper slice to be about the same length as the mango pieces.
Step 3
Slice the mango to get pieces the same length as the bell pepper slices. The mango slices will be slightly thicker than the bell pepper.
Step 4
Chop the cilantro grossly.
Step 5
Chop the red onion as finely as possible.
Step 6
Put all ingredients in the bowl with the dressing. Mix gently.

Enjoy!* Too much salt ruins this salad. Add cautiously.* The cayenne pepper and the red onion remain subtle to please all palates, but they are essential to bringing a fuller flavor. Do not omit.* For the ideal result, keep the amount of mango slightly greater than bell peppers
